Decadent Thanksgiving Turkey Cupcakes

My son wanted to bring something sweet to school for his Thanksgiving Feast, so we made these adorable little turkey cupcakes!



What you need:


Chocolate Batter:

1 1/3 cups all-purpose flour
1/4 teaspoon baking soda

2 teaspoons baking powder

3/4 cup unsweetened cocoa powder

1/8 teaspoon salt

3 tablespoons butter, softened
1 1/2 cups white sugar
2 eggs

3/4 teaspoon vanilla extract

1 cup milk

Preheat oven to 350 degrees F. Line a muffin pan with foil liners. Sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
In a large bowl, cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well with each addition, then stir in the vanilla. Add the flour mixture alternately with the milk; beat well. Fill the foil liners 2/3 of the way.
Bake for 15 to 17 minutes or until an inserted toothpick comes out clean.

Chocolate Frosting:

1/4 cup margarine, melted

1/2 cup unsweetened cocoa powder

1/3 cup milk
1 teaspoon vanilla extract

3 1/2 cups confectioners' sugar

In a large bowl, beat margarine and cocoa together until combined. Add milk and vanilla; beat until smooth. Gradually beat in confectioners' sugar and adjust with milk or confectioners' sugar if necessary until desired consistency.

Feathers: Reeses Pieces

Beak: Hershey Kisses dipped in melted pumpkin chips
